There are plenty of sayings that make reference to the aging of wine. “Like wine,” quippy milestone birthday cards read, “you get better with age.” But here’s the thing – most wines actually don’t get better with age. (You, on the other hand, surely will.)
The topic of aging wine can add unnecessary stress to wine drinking, and shouldn’t we all agree to cut down on stressors in our lives? Rely on the fact that most of the time, it’s fine to open that bottle of wine. But if you think a wine might improve with time, consider its structure and flavor in youth and use those clues to tell if the wine will age well.
