Pork Carnitas at Deep South Texas


Today we are making Pork Carnitas at Deep South Texas. Spicy two inch cubes of pork butt fried in oil and boiled until tender. Put this in homemade tortillas and you have a great meal. List of ingredients below.

4 lbs pork butt cut into 2 inch cubes
1 cup lard
1 large onion chunked
6 cloves garlic
1.5 tablespoons toasted, powdered, Mexican chilies
1 tablespoon oregano
1/2 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 orange, zest and juice
water to cover pork
